El Quijote Quince Paste (or membrillo) is a traditional Spanish sweet, firm fruit spread made from Andalusian quinces, sugar, and pectin, resulting in a caramel-colored, marmalade-style jelly. It is primarily paired with cheeses charcuterie, or used as a glaze for meats. It can also be used on toast, inside pastries, and in vinaigrettes.
