Brunelli Ricotta Salata is a brand of Ricotta Salata, a semi-hard, salted, and aged Italian cheese made from sheep's milk whey. Unlike fresh ricotta, it is firm, salty and crumbly, making it suitable for grating, shaving, and crumbling. Traditionally a Sicilian cheese, this version is made by the famous artisanal company Brunelli in Lazio, Italy. In addition to serving it on your cheese board with fruits or meats, it has a variety of uses in the kitchen as well. Try it shaved or grated over pasta dishes, such as Bucatini all'Amatriciana or Pasta alla Norma, and added to salads, especially with bitter greens like arugula or radicchio, served on pizzas.
